Filipino Chicken
Marinate 1 breast of chicken, sliced, 1 medium onion sliced, and two
plum tomatoes, sliced in 5 T soy sauce and 1 T vinegar with 10 whole
black peppercorns, 10 minutes.
Bring to boil with 1 chopped potato and 3 chopped carrots. Cover and
cook on low 20-25 minutes. Serve over white rice. Simple and
delicious.
